Savoury Spinach and Cheese Oatmeal

  • 1/2 cup Jungle Oats
  • 1 tsp butter
  • 1/2 small onion, diced
  • 1 1/2 cups vegetable or chicken stock
  • 1 cup baby spinach leaves
  • 1/4 cup cheddar cheese, grated
  • 1 boiled egg, peeled and sliced in half
  • Hot sauce, for serving, optional
  1. Melt the butter in a small pot and saute the onions over a medium heat until translucent.
  2. Pour in the stock and mix in the Jungle Oats.
  3. Bring to a boil over a high heat.
  4. Reduce the heat to a low simmer and cook for 5 minutes or until the oats have softened into a porridge.
  5. Remove from the heat and stir in the spinach and cheese..
  6. Transfer to a bowl and top with the boiled egg and a drizzle of hot sauce.
