2 servings Time 10 mins Difficulty Easy Blueberry Cheesecake Overnight Oats Shop the recipe SHOP NOW Ingredients Method Oats Layer 120g Jungle Oats Instant Oats 2 tsp honey 320ml milk 100g blueberries (fresh or frozen) Blueberry Layer 80g blueberries (fresh or frozen) Cream Cheese Layer 40g cream cheese 1/2 cup plain yoghurt 1 tsp honey 20 blueberries, for topping Starting with the oats layer, combine the oats, honey, milk and blueberries and transfer to a bowl or jar of your choice. For the blueberry layer, warm the blueberries in the microwave until soft. Using a fork, smash the blueberries until a jam is formed and spoon on top of the oats. For the cream cheese layer, soften the cream cheese in the microwave for 10 seconds. Mix the yoghurt and honey into the cream cheese and spread on top of the blueberry layer. Refrigerate overnight or for a minimum of 4 hours and enjoy straight from the fridge. Before serving, top with a sprinkle of fresh blueberries.
