Oatmeal Chocolate Chunk Cookies

  • 250g Jungle Oats Large Oat Flakes
  • 250g all-purpose cake flour
  • 1 tsp salt
  • 1 tsp bicarbonate of soda
  • 2 tsp ground cinnamon
  • 250g unsalted butter, softened
  • 200g brown sugar
  • 1 tsp vanilla essence
  • 2 large eggs
  • 320g dark chocolate, roughly chopped into chunks
  1. Preheat the oven to 180°C or 160°C with fan.
  2. Line two baking trays with baking paper. 
  3. In a medium bowl, combine the flour, salt, bicarbonate of soda and cinnamon and set aside. 
  4. In a separate bowl, cream the butter and sugar for about 6 minutes or until light and fluffy.
  5. Beat the vanilla and eggs into the creamed butter mixture.
  6. Slowly add the flour mixture until combined. 
  7. Mix the oats and chocolate chunks into the cookie dough.
  8. Drop spoonfuls of cookie dough onto the lined baking trays (6 per tray) leaving enough room for spreading during baking. 
  9. Sprinkle additional oat flakes on top of the dough.
  10. Bake for 10-12 minutes or until golden but still chewy.
