Do Life With Heart
- 1 x 50g cup Oatso Easy Instant Multigrain Cereal Oats, Apple and Cashew Nuts
- 45ml (3TB) self-raising flour
- 15ml (1TB) sugar
- 1 large egg
- 1.25ml vanilla essence (optional, but recommended)
- 15ml (1TB) milk
- 15ml (1TB) oil
- 1 ripe medium sized banana, mashed
- Oil or butter for frying
- Frying pan with a lid
- In a bowl or in a large jar, mix together the Oatso Easy Instant Oats with the self-raising flour and the sugar.
- In a little bowl or mug, blend the egg with the vanilla essence (optional), milk and the oil with a fork until well blended.
- Add the egg mixture and the mashed bananas to the mixed Oatso Easy Instant Oats and the self-raising flour.
- Mix well together until all the ingredients are perfectly blended together.
- Heat a frying pan with a lid on low heat.
- Only when the frying pan is nice and hot, add a teaspoon or two of oil or butter. Immediately lower the heat to low.
- Add 1 heaped tablespoon of batter for each Oatso Easy mini pancake. If your pan allows, cook two or three mini pancakes at a time.
- Cover with the lid and keep the heat on low.
- Cook for 2 to 3 minutes, (you will see when they are firm enough to turn) and then flip over each pancake with a spatula or egg lifter and cook the other side for another 2 minutes or so until done.
- These gorgeous Oatso Easy Banana Pancakes are awesome on their own but if you wish, serve with eggs and bacon for breakfast or serve with your choice of butter, syrup, honey, yoghurt, sliced bananas, berries or fruit.
