Berrylicious Muesli Yoghurt Tart

Wow!  There are simply no words to describe this gorgeous tasting tart. If you are making the large tart, make the muesli base about 6 to 8 hours before you plan to serve it as it needs to set well before you can slice it neatly.  Couples or singles will enjoy making the quarter recipe which can be served immediately after preparing and doesn’t involve making baking a base in the oven

A whole Tart (about 12 slices)

Filling:

  • 125ml (½ cup) lemon juice
  • 1 tin (397g) full cream sweetened condensed milk
  • 200ml cream
  • 250g (1 cup) Full Cream Greek Plain Yoghurt 
Muesli base
  • 200g Jungle Mixed Berries Muesli
  • 150g cake flour
  • 80ml (1/3 cup) sugar
  • 1.25ml baking powder
  • 125g butter
  • 1 egg
  • Spray and Cook
  • Berries for decorating (optional)
Oven proof pie dish (±22/23cm in diameter)

Quarter Recipe made fast and easy (Makes 4 small portions)

Filling:

  • 30ml lemon juice
  • 100ml condensed milk
  • 50ml cream
  • 65g Full Cream Greek Plain Yoghurt

Layered with:

  • Jungle Mixed Berries Muesli as is
  • Berries for decorating (optional)
  • Enough for 4 ramekins or 4 little jars or 4 glasses

(The balance of the condensed milk can be poured into a jar and stored in the fridge till the next time you make this tart).

 
 

 

 

 

To make the muesli base for the large tart

  1. Oven on 180°C
  2. Melt the butter
  3. Beat the egg.
  4. Add all the ingredients together in a food processor and mix until well blended with the cut blade.
  5. Grease an oven proof pie dish and evenly press and spread the muesli dough over the base and up the sides of the pie dish.
  6. Bake for 15 to 18 minutes until the edges are slightly golden brown.
  7. Allow to cool for at least 30 minutes or until the base is cool before adding the yoghurt filling.
Make the yoghurt filling when the tart base is cooler
  1. Beat the lemon juice and the cream until it starts to get thicker.
  2. Add the condensed milk and yoghurt.  Beat well.
  3. Pour the yoghurt mixture over the Mixed Berries Muesli base and refrigerate overnight or for 6 to 8 hours so that it can set firmly.  The longer it stays in the fridge the firmer it gets so that you can slice it neatly.
  4. Before you wish to serve it, decorate the topping with berries of your choice.
To make a quarter recipe the fast and easy way
  1. Make the filling as above and keep the filling in the bowl while you organise your jars, bowls or glasses.
  2. Layer a little Jungle Mixed Berries Muesli, then a little yoghurt mixture and then another layer of muesli and lastly, another layer of yoghurt filling. 
  3. Decorate with a few berries or a sprinkling of muesli.  Wala!  So easy and so delicious.  You can either serve it immediately or place it in the fridge until it is required.
