Jungle Plus Booster Brownies

These decadent, protein packed brownies are perfect for a healthy energy snack in between meals or packed in a rucksack for your hiking trip.  You will never believe healthy tasted so good!  The taste of the bananas is almost impossible to detect.  These brownies do not contain wheat flour or eggs and are delicious served as is or spread with melted chocolate, butter cream icing or Nutella.

  • 6 small to medium bananas weighing with the skin ±650g 
  • 200g butter, soft or slightly melted
  • 160ml (2/3 cup) Jungle Instant Oats
  • 160ml (2/3 cup) Jungle Plus Protein Porridge
  • 160ml (2/3 cup) unsweetened cocoa powder
  • 6TB dark brown (treacle) sugar
  • 7.5ml (1½ tsp) vanilla essence
  • 80g Dark or Milk or Ivory Cream Beacon chocolate slab (add last)
  • Spray and Cook
  • Oven proof dish (20 x 20cm in diameter)
     
  1. Oven on 165°C.
  2. Peel and mash the bananas.
  3. Place all the ingredients (except for the slab of chocolate) together in a food processor with the cut knife and blend through until well blended.
  4. Grate the slab of chocolate and fold in through the thick batter.
  5. Grease the oven proof dish.
  6. Bake for 60 minutes until cooked through.  Test with a metal skewer and if a few crumbs are on the skewer it will be fine as it will continue cooking a little more in the dish.
  7. When almost cool, place in the fridge to set nicely before slicing.
  8. Store in the fridge in an airtight container.  These brownies freeze extremely well too.
  9. Delicious served as is or a little sieved icing sugar or a topping of your choice.
