Cheesy Leek Tart with Oat base

This spectacular tart is guaranteed to be a huge hit at your next party or gathering but can also be served as a main meal with a salad.  It will serve 4 persons as a main meal with accompaniments.

Filling

  • 350g Leeks, washed very well
  • 125ml (½ cup) cream
  • 15ml (1TB) *oat flour or cake flour 
  • 5ml (1tsp) baking powder
  • 3 eggs, beaten
  • 2ml salt
  • 2.5ml (½tsp) mixed herbs (optional)
  • Few shakes of pepper
  • ¼ to ½ teaspoon mustard
  • 1½ cups grated cheddar cheese (divided in half)
  • ¼ to ½ cup parmesan cheese, finely grated (optional)

Pastry

  • 100g (1¼ cups) Jungle Instant Oats
  • 100g (1¼ cups) grated cheddar cheese
  • 50g (¼ cup) melted butter
  • Oven proof pie dish (± 22/23cm diameter)
  • Spray and Cook
 
 

 

  1. Cut the very well washed leeks into ½ to 1cm slices.
  2. Place the leeks in a little pot of about 2½ cups water and ½ tsp salt (2.5ml) and bring to the boil.  When the water boils, turn the heat down to medium and boil gently for 5 minutes until the
  3. leeks are just cooked.  Drain well in a colander.
  4. Preheat the oven to 180°C.
  5. For the pastry, mix together the Jungle Instant Oats, grated cheddar cheese and the butter together in a food processor with the cut blade.  Blend for two minutes.
  6. Press the pastry into a greased oven proof pie dish.  Set aside
  7. Beat the eggs and add the cream, oat flour (or flour), baking powder, salt, mustard and add only ½ the total of grated cheese.  
  8. Pour the egg/cheese mixture over the pastry base and arrange the leeks neatly over the sauce.
  9. Lastly, sprinkle the rest of the grated cheese and parmesan cheese (optional) over the top and bake open in the oven for 30 to 35 minutes until golden.
Serve warm or cold with a salad for a main meal.  It is also great to serve as snacks at a party or served as a starter.

*Measure about a cup or less of Jungle Instant Oats and place in a smoothie maker/food processor or coffee grinder and ground until it resembles fine flour.  Measure out a tablespoon to use in this recipe and store the balance of the oat flour in a jar in the fridge to use for other recipes such as thickening soups or stews. etc.
